Our story
Everything grown in Ontario is picked at its peak ripeness. That's the taste that sets our freeze-dried fruit apart. Our apples and pears come from our family farm.

The collection

Small-batch jams
Cooked in small batches from Ontario fruit picked at its best. Start with the Haskap, or the Wild Blueberry Jalapeño if you like a little heat.
Straight from our trays
No stock photos here. This is the fruit going into the freeze-dryer this season.

Freeze-dried vs dehydrated

The machine freezes the food and lowers the pressure. The ice changes directly into water vapour through sublimation, and a later drying stage removes the remaining moisture. Nothing gets cooked, so the fruit keeps its shape, colour and flavour. Kept sealed in a cool, dry place, it stays good for up to 2 years.
| Freeze-dried | Dehydrated | |
|---|---|---|
| Texture | Light and crunchy | Chewy or leathery |
| Colour and shape | Stays bright, keeps its shape | Darker and shrunken |
| Water removed | About 98% | Usually 80 to 95% |
| Heat | None, it's frozen | Hours of warm air |
| Add water | Plumps up in minutes | Stays chewy |
| Shelf life | Up to 2 years sealed; eat within a few weeks once opened | Usually 6 to 12 months |
